Black Truffle Salt is one of those ingredients that can really change the flavor of any dish, but it’s so good with seafood that it deserves a spot on your list of best selling seasoning ingredients. Seafood lovers will go to great lengths to enjoy their meal. But how do they do it? They garnish it properly with this salt that adds a lot of flavor without clogging their arteries.
Directions: For the black truffle salt recipe, you’ll need: three to four fresh truffles, a medium size bowl, a fork, some butter or shortening, cream cheese, and optional fresh dill. For the cream cheeses, mix the fresh cream cheeses well with the parmesan cheese. Place the mixture in the bowl and then place the bread in the center of the mixture. Toast the bread, spread a little cream cheese over the top and then place the truffles in the center of the mixture.
Cover the truffles with the black truffle salt and then slice them. Then, use the fork to take each truffle and place them on a plate. Now you can add additional cream cheese or other toppings to your sandwiches. You can also make a truffle sandwich while keeping the other ingredients chilled until ready to serve.
As for the other ingredients, you’ll need about two tablespoons of softened butter or shortening, four to six ounces of cream cheese, a teaspoon of fresh dill, and an optional fresh bay leaf or Rosemary sprig. Bring all these ingredients to a boil in a large sauce pan over low heat. Stir to combine. Then, add the sugar, stirring constantly. Once the sugar is dissolved, remove from the heat and let cool. Temperatures around 100 degrees are ideal when using this recipe.
When the mixture is completely cooled, pour it into small air-tight glass bottles and store in the refrigerator. Seal the bottles tightly and store in the dark. This mixture will last for about two years, although the flavor will change a bit after this time. It is still a good idea to stir it every so often to help the flavor come back to its true essence.
This black truffle salt recipe is one of my favorites. I can usually eat a piece before the dessert course even comes to a dessert bar. Sometimes, I put the tiny blocks of cheese next to the dessert fountain to enhance the flavor. But, since I love the taste of the cheese with the warm air, it is not necessary.
